This is a Michelin-starred dining room built around traditional Beijing cooking given a careful modern rethink. The Peking duck, fired over jujube wood and served three ways, is the anchor, but the kitchen ranges further than that. Beijing-themed cocktails round out a meal that takes the city's culinary past seriously without turning it into a museum.
