    Lyons is a small river town north of Boulder where you wouldn't expect to find a contemporary French restaurant this precise, yet here it is. The menu shifts constantly, chasing whatever the chef is curious about, and the wine list leans into small Old World producers working with native grapes, which the floor staff navigate with you rather than at you. A James Beard semifinalist for Best Chef: Mountain.
