An 18th-century courtyard townhouse just off the Faubourg Saint-Honoré, converted into an all-suite mansion-hotel where the loudest thing is the Carrara marble in the bathrooms. Designer Michele Bönan has a gift for disappearing into a building rather than stamping himself on it, and the result reads less like a hotel than a very well-run private house where someone else handles the bills. Le Gilbert serves breakfast and drinks all day.
