A kaiseki restaurant where the chef spent years at a ryotei mastering simmered dishes and soups, and that training shows in every bowl. The kitchen layers first-draught dashi with fish bone broth to pull more depth from each ingredient, and the surinagashi shifts with whatever the season is doing. Meals close simply, with white rice and clear soup, which after everything that came before feels less like an afterthought and more like the point.
