    The rooftop bar looks straight across at Seville's cathedral spires at golden hour, which tells you something about how the Mercer Plaza chose its address. It's a boutique hotel occupying a pair of old family residences on the city's main square, where original tilework, wrought-iron railings, and a central Andalusian patio survive alongside very deliberate minimalist interiors. Rooms skew large and quiet, with high ceilings and freestanding tubs, a few spread across two floors.
