Kumiko woodwork panels and lacquered counter trays set the tone before the food arrives at this intimate fine-dining room in Roppongi. The chef works over a wood flame, folding Japanese ingredients and seasons into French structure, which the house calls "wakon yosai," Japanese spirit with Western learning. The smoky warmth of the hearth hangs in the air throughout. It holds a Michelin star.
