    High ceilings, marble floors, and a partially open kitchen set the scene at this Michelin-starred contemporary restaurant in the historic heart of Ourense. The chef reworks the menu daily around whatever came in that morning, so three tasting menus exist in name more than in fixed form. The cooking is technical but rooted in instinct, and the room has enough old-building gravitas to keep it from feeling like a laboratory.
