A thirteen-room hotel tucked inside the walls of Dalt Vila, Ibiza's fortified old town, for anyone who came for the island and not the DJ sets. The building has been around forever, and each room follows the original floor plan, so no two are quite alike. Whirlpool baths come standard across every room, the restaurant is modern Mediterranean, and a walk-in wine cellar sits downstairs for when the cocktail bar feels like too much effort.
