The entrance is a home appliance shop with no sign, which sets the tone for everything that follows. Inside, a small, dim sushi counter seats everyone at once, because the single omakase menu runs like a performance and the chef is its subject. Walter Sidoravicius trained in Tokyo and later taught at the Basque Culinary Center, and the nigiri and raw courses reflect that seriously. One Michelin star.
