This fifth-floor sushi counter wears the spare calm of a tearoom, and the omakase runs through a classic lineup, white fish, tuna in three consecutive cuts, gizzard shad, sea urchin, conger eel, each piece of nigiri seasoned with salt and vinegar in a way that makes the sake feel like the whole point.
