The redesign, by the same hand behind Les Fermes de Marie, leans toward the classic rather than the fashionable, which suits a place this old-school. Three restaurants, a spa, and the standing invitation of mid-afternoon champagne make it easy to forget skiing was technically the point. Open December through April.
