    A stone courtyard tucked into the old-town lanes at the foot of the church of St Euphemia, which is as cinematic a setting as Croatia offers. Monte is a fine dining restaurant with a Michelin star, built around two tasting menus, one plant-based and one Adriatic-and-meat, both rooted in Istrian ingredients handled with quiet precision. The wine list leans into Croatian producers, which is a commitment you notice. Service is warm without being theatrical.
