    Gaggan Anand's Indian-Mexican fusion restaurant is decorated in Jodhpur orange and Oaxaca blue, with neon signs and rattan furniture setting the stage for a menu that takes the mashup completely seriously. Butter chicken enchiladas, pork vindaloo tacos, keema quesadillas: the kitchen commits. It landed at number 27 on Asia's 50 Best Restaurants in 2026, which tracks for a place where the churros come dusted with cardamom and nobody at the table looks up from their plate.
