A few steps below street level in Linz's old town, a vaulted cellar has been stripped back to something bright and minimal. Muto is a creative, seasonal restaurant whose name nods to the Latin word for "to change," which is a neat way of saying the kitchen is always moving. Dishes play with texture and flavor without taking themselves too seriously, and the front-of-house team keeps things loose enough that you forget you're in a vaulted room.
