A red-brick Western building from the turn of the last century, now home to a contemporary French prix fixe restaurant with chandeliers that seem borrowed from a minor duke's dining room. The name nods to the Japanese for kneading and to brickwork itself, which tells you something about how seriously the chef thinks about structure. The menu leans inventive, with classic French technique as the foundation and enough imagination to keep it interesting.
