Martín Berasategui holds three Michelin stars at his flagship, and this river-facing restaurant inside the Tayko hotel carries one of its own, channeling his cooking through a disciple who has clearly done his homework. The exposed brick and concrete beams date to when this corner of Bilbao's old quarter was still figuring out what buildings could be.
