Tucked into the basement of a Georgian townhouse hotel, this fine dining restaurant earns its Michelin star through cooking that looks deceptively restrained and turns out to be anything but. Chris Cleghorn's menu leans into texture and contrast rather than flourish, and the desserts tend to linger in the memory, a dark chocolate and olive oil combination in particular. Bath's Georgian calm carries right through to the table.
