This omakase spot runs at a lofty price and leans into it, pairing Toyosu-sourced fish with truffles, foie gras, and wagyu tartare piled onto toasted brioche like restraint was never on the table. The nigiri, though, pulls back into a quieter edomae register where the rice does the talking. A James Beard semifinalist and Michelin Selected, it sits steps from a larger sibling that presumably lets you breathe a little more.
