Inside, a vegan Japanese tasting menu leans hard on fermentation, which the kitchen pursues seriously enough to run its own fermentation lab. The set menu is spare-looking on the plate and considerably more involved than it appears. Tea pairings are treated as a main event, not an afterthought.
