Pablo's Coffee on Sixth Avenue has no wi-fi, a policy that feels radical in 2024 and probably felt radical then too. This indie coffee shop has been roasting its own beans since before Denver caught the craft-coffee bug, and the room still has the lived-in feel to prove it: couch-filled corners, a small bar top facing the baristas, and the ambient noise of people who are, against all odds, talking to each other.
