Landlocked Valladolid isn't where you'd expect to eat seriously good seafood, but Paco Espinosa has been quietly making that case for a long time. The front tapas bar does brisk work, while the dining room runs a proper à la carte with Iberian ham, home-style stews, and fish and shellfish that travel better than they have any right to. The wine list reaches past Spain, which in a room this comfortable feels almost unnecessary.
