Paulownia
Modern New American
A wood-panelled dining room in the 20th, named for a tree that used to grow across the street. The chef and sommelier met in Alain Passard's kitchen and brought his reverence for vegetables with them to this neighborhood bistro, where the cooking is seasonal, rooted, and prepared to order. Whole cuts come out of the oven; tortellini turns up alongside celery consommé. The service is warm without being performative, which in Paris counts for something.
