A boutique hotel from Alexandre Gauthier, the chef behind La Grenouillère, pieuX occupies a 19th-century building with a leafy winter garden, a spiral wooden staircase, and a breakfast room that looks lifted from a Parisian side street. Rooms run from attic suites with vaulted ceilings and reading nooks to grander spaces with marble fireplaces and clawfoot tubs. The fortified citadel and cheese shops of Montreuil-sur-Mer are right outside the door.
