Chris Bianco is the Bronx-born pizzaiolo who convinced the rest of the country that Phoenix belongs in the pizza conversation, and this snug 42-seat brick room in Heritage Square is where it started. Wood-fired Neapolitan pies come out of an oven that has been running for decades, drawing lines that have shown no signs of shortening. Bianco holds two James Beard Awards, which is two more than most people who make pizza for a living.
