Chris Bianco's compact brick room in Heritage Square has been the reason Phoenix became a pizza town—his Neapolitan pies, built on tomato, fresh mozzarella, and basil, inspired a generation of American pizzaioli since 1996. Lines still wrap around the block for wood-fired pizza from a man who won two James Beard Awards and fundamentally changed how Americans think about pizza.
