    Named for the ship of a polar explorer, this Michelin-starred restaurant inside Hôtel Castelbrac sits on a panoramic terrace with Saint-Malo floating in the distance. The chef grew up nearby and spent years cooking elsewhere before coming home, and the menu reads like a record of that journey, shaped by hand-dived shellfish, seaweed, and whatever the local coast offers. The desserts, by most accounts, are the moment people stop talking.
