    A small Annapolis dining room built around pickling and fermentation, which sounds like a thesis until the food arrives. The roast chicken is beautifully bronzed, the steak-frites comes with kimchi-beef jus, and the crab salad on hash browns is the kind of thing that makes you forgive everyone their restaurant concepts. The bar earns equal attention. A Washingtonian top-100 pick.
