Viet Pham, formerly of fine dining, keeps the menu tight: hot chicken sandwiches, crinkle-cut fries, a Mexican street corn salad, and a few house sauces. The move from tasting menus to paper trays is either a pivot or a relief, and the lines suggest nobody is complaining either way.
