Prospect is the restaurant inside Aspen's Hotel Jerome, a bright, mismatched room that feels like a lodge got a little carried away at the paint store. It serves all three meals, with bagels and chicken-fried steak in the morning and a more Mediterranean turn by dinner, plus a proper bar. It's Aspen, so expect a few puffy vests at the next table. Michelin lists it as a Selected Restaurant.
