The dining room inside the Park Hyatt Paris-Vendôme was designed by a Franco-Mexican firm, which gives it a quietly unusual warmth for a hotel restaurant on the rue de la Paix. Jean-François Rouquette, who came up through Taillevent and Le Crillon, runs a Michelin-starred kitchen here built around obsessive sourcing and restrained technique. The cooking is modern French fine dining, the kind where the produce is the argument and the chef mostly stays out of the way.
