The vaulted, whitewashed dining room near the Pont Neuf hangs contemporary art on its curves, which sets the mood before anything arrives. This is a two-Michelin-starred creative restaurant where the chef works a particular triangle of garden herbs, fish from the Atlantic coast, and Pyrenean produce into something that smells of the sea and tastes of the mountains at once. Appetisers arrive in a small festival before the meal proper begins.
