Hotel Chocolat is not a metaphor. The parent company revived St. Lucia's cacao trade, and the estate hotel outside Soufrière leans hard into its origins: the restaurant builds cacao into both sweet and savory dishes, and the spa offers chocolate treatments for guests who prefer absorption over consumption. Accommodations are private cottage-style "pods" with open-air showers and views of the Pitons. Adults only, which explains the noticeable quiet.
