Bay windows look out onto a Japanese garden in the middle of Reims, which sets the tone for everything that follows. This is a small, spare fine dining room where a Japanese chef lets aromatic herbs, condiments, and vegetables do the arguing alongside langoustine and lobster, the whole thing landing somewhere elegantly uncategorizable. The wine list runs to 250 champagnes, because of course it does. Two Michelin stars.
