    The chef here goes out and catches the fish himself, which should tell you something about how seriously this one-Michelin-star tasting menu restaurant takes its sourcing. The menu orbits the biodiversity of the Castellón coastline, leaning on species most chefs wouldn't bother with: wrasse, trumpet fish, beard fish, the kinds of things that usually skip the auction floor entirely. Rice dishes draw on old fishermen's boat recipes, and a Japanese influence turns up quietly alongside the Mediterranean pantry.
