Charcoal is doing most of the talking at this intimate counter restaurant tucked into a Ginza basement, where the chef tends his flame with the same attention most people reserve for their investments. The cooking is seasonal Japanese, pared down to let the ingredients argue for themselves, from bamboo shoots in spring to puffer fish in winter. Ink-brushed lotuses line the wall behind the counter. It holds a Michelin star.
