Inside, the French restaurant keeps things sleek, with an à la carte and a tasting menu that lean toward bold pairings, fish sharpened with pickled cucumber and jalapeño, tartare reworked in ways the kitchen clearly enjoys. The chef has the technique to pull it off without things going sideways. Open seven days a week, which Haarlem quietly appreciates.
