The open kitchen runs on charcoal and open flame, and the dining room looks straight out over the Mallorcan coast. This is the modern Mediterranean restaurant inside the Pleta de Mar hotel, where Marc Fosh lends his name and a young local chef runs the kitchen day to day. The à la carte and tasting menu both lean hard into Balearic ingredients: fish from the market, local meats, vegetables pulled from the season.
