A chef who plates his own food and sometimes runs it to the table too, Sébastian is a one-man creative French restaurant near the cathedral with bare walls and no pretense of otherwise. The menu is short and the sourcing is local, with the kitchen doing quietly strange things: black pudding folded into gyoza, rabbit in bacon crust alongside a pig's trotter fritter. The kind of place that makes a virtue of doing less, better.
