Seraf Mahmutbey
Turkish
The wood-fired oven does a lot of the talking here, turning out Turkish cooking built around local producers whose goods you can also buy in the shop on your way out. The chef sources Trakya Kivircik lamb specifically to keep old Anatolian recipes from disappearing, and the içli köfte made with it is the thing to order. A spacious, modern restaurant a little outside the city center, with a menu that follows the seasons closely.
