    Chef Shinji Kurita presides over a 13-seat counter in Old Town Scottsdale, where he builds an omakase progression that might include kombu-cured halibut, scallop with yuzu-miso, and perfectly calculated nigiri across two seatings nightly. It's a splurge at $250 a person, reserved well ahead and worth the two hours you'll spend watching a master at work.
