The name means waiting for the right tide before pushing out to sea, and the chef seems to have taken it literally. This Japanese fish restaurant on the second floor in Uehara is built around a daily run to Toyosu Market, where the chef chats up brokers and bleeds the fish on the spot to lock in freshness. The room draws people the way a good harbor does, which was more or less the point from the start.
