Perched on the eighth floor of the Hilton, this sleek hotel dining room does the international-menu thing with some conviction. The kitchen swings between Japanese, with nigiri and maki rolls, and broader Asian soups and dumplings, then pivots to Mediterranean meat and fish wheeled out tableside on a trolley. Soft lighting, a soundtrack, and a certain plush remove from the city below make it feel a world apart, which is probably the point.
