    Sofitel's sprawling five-floor complex sits in the Hivernage, the sensible middle ground between the medina's chaos and the far-flung Palmeraie resorts. Nearly 350 rooms means this is no riad, but the low-rise layout keeps it from feeling like a convention hotel, and the spa is genuinely large enough to make the city feel very far away. The Paris-meets-Morocco interiors do their job without apology.
