A kaiseki-style Japanese restaurant in Nakagyo where the kitchen runs on charcoal, and the chef treats that as a genuine obsession rather than an aesthetic choice. The distance between fire and ingredient, the moisture in each piece of fish or vegetable, the placement of the coals: all of it is managed course by course. Smaller dishes are woven in between to shift the pace. The cooking is quiet and methodical, which in Kyoto is a compliment.
