  1. At this Michelin-starred Edo-style sushi counter in Chuo, the fish is cut in wide strips that drape over the rice rather than sit on top of it, which sounds like a small thing until you're eating it. The blended sushi rice is tuned to lift the fish's flavor, not compete with it. Straw-smoked mackerel with mustard signals that the chef isn't just preserving tradition, he's in conversation with it. The counter was built by craftsmen, and the room somehow manages to feel relaxed.
