Tucked into a basement on Sennichimae, this intimate omakase sushi counter runs a traditional nigiri course where ginger wrapped in nori marks the turn from appetizers to sushi, a small ritual that sets the pace. The chef follows orthodox technique closely but serves shrimp raw, which says a lot about his confidence in the ingredient. The name means something close to "forever," and the chef seems to mean it.
