A seven-seat cypress counter in Ginza where the chef reportedly goes to sea to check where the fish is caught before deciding what ends up in the omakase. That level of obsession reads plainly in the room, which is stripped of almost all decoration, as if anything extra would distract from the point. The course order shifts with the season rather than running on a fixed script, so returning guests rarely eat the same meal twice.
