Four tables, fifteen covers, one sitting: Sylvestre Wahid runs this two-Michelin-starred fine dining room inside a Courchevel ski resort like a private dinner party he happens to be cooking. The open kitchen is the show, and the chef's trick is pairing French seafood, lobster and crab, with Pakistani spices, pickles, and lentil dahl in ways that shouldn't work as neatly as they do. Après-ski has rarely involved this much daring.
