  1. Standing sushi bar tucked onto the second floor of Azabujuban, where you order one piece at a time and nobody minds if you linger over the rice. The kitchen leans into the pairing of rice vinegar and fatty fish, and the logic holds bite after bite. Digital menus and billing keep things moving. It's a Michelin Bib Gourmand take on Edo street-stall culture, which is a more elegant sentence than it has any right to be.
