The call bells on the tables read "Press and we'll come" in Hakata dialect, which tells you the mood pretty quickly. This is an izakaya where the Fukuoka-born chef cooks with freewheeling imagination, adjusting dishes and portions to whatever you feel like that night. Seafood comes in from the Fukuoka market, regional Kyushu dishes fill the menu, and ceramics by the legendary artist and gourmand Rosanjin Kitaoji line the walls.
