The name comes from the chef's tattoos, each one a chapter of his life rendered, apparently, in cooking. This Michelin-starred gastro-bar in Huesca runs a single 12-course tasting menu built on hyperlocal Aragonese ingredients, local trout, brass meats, and olive oil from down the road. The pin-up decor keeps things from getting too solemn about itself, and coffee lands in a looser side room, which is a good instinct.
